About Ajua Maya
Bought by Brenda and Jorge Alfaro in May 2001, Ajua Maya has been in the business of offering the best of delicacies to customers for long enough. This casual, modern restaurant delights customers' palates with Mayan, Mexican and Mestizo cuisine. Certified Angus Beef, lobster, Flambé seafood, desserts, exotic meats and steaks are some of the specialties on offer. There is also a Caesar Salad, which is usually made at the table. A children menu is also available.
Ajua Maya boasts of great staff, many members of which have been with the restaurant from the very beginning. These staff members have contributed immensely to the popularity and success of the place by ensuring that customers get the best of treatment.
The restaurant's team of competent Mayan chefs is headed by Pedro Balam, who moved to the Riviera Maya area from a small Yucatan Peninsula village in search of greener pasture. A self-taught chef, Pedro is adept in preparing quality Mexican and traditional Mayan cuisine as well Mestizo delicacies. There is also Brenda to chip in her Virginian recipes.
Each of Ajua Maya waiters doubles as a Mestizo flambé chef, able to prepare mouthwatering French-themed flambés such as lobster and shrimp flambéed Mayan style with Xtabentun and lamb chops flambéed with a Bourbon curry sauce. Tequila and a liquor of Mayan origin flavored with honey and Anise are two of the other interesting offerings.
